If you go with XP only get 2GB ram. It has problems addressing more memory than that so the money you save on ram can go elsewhere. Besides, 2GB is more than enough for photos and music editing. I have 2GB and video editing isn't bogged down at all. And you should't do 3GB because you'd lose the benefits of the dual channel memory bus, (no 1.5GB ram exists).
Another fun fact about ram is don't get duped into the 667mhz vs. 800mhz "upgrade". Memory runs at a fraction of the front side bus speed (FSB) and at only one speed for a given processor speed. So if you have 667mhz ram and "upgrade" it to 800mhz ram you gain NOTHING. The ram is still running anywhere from 200-333mhz anyways (way below the rating). Has to do with the dual channel memory bus. Bottom line is if they offer two speeds get the lower one.
Also if they offer XP Home version for cheaper you can go with that. Pro doesn't have any features that you'll use in a home environment.
I just helped a guy at work pick out a Dell with XP and he got it over the weekend and loves that it's compatible with all his old software, and really fast.
