Years ago we ripped out our existing laminate counter and replaced it ourselves with tile. We're not wizards and it was easy. Cut and install plywood. Find some tile on close-out for 1/2 price or less. Rent tile cutter. Lay down the adhesive, lay down the tile, grout it, seal it, done. Very solid, rich look, and pretty easy.
