I too think you are ok on having installed that Windows 7 as you did. I think you are ok if you need to install again though it may be helpful to have an old windows cd around IF the system ever prompts for your previous copy, though it sounds like you didn't have that issue.

My opinion is you aren't using it on the old Acer so you should be able to use it on another machine, but I am not the software police... nor do I think they care about you and this one copy as much as people stamping out copies by the dozen.

Not familiar with the VMware Fusion first hand but have had good luck with Parallels even though I hate to pay for software!

I'd keep the RAM and old hard drive from the Acer. You can always buy a usb or firewire drive enclosure for the old drive and make a small external drive out of it even just for backup use.

Look around on line, the drive enclosure should run between $20 and $50 depending upon where you buy.

I'd trash the rest of the Acer or recycle it when someone in your area is doing a free electronics recycling drive / drop off... though you could sell it cheap for parts on ebay if you don't mind the hassle of listing it, shipping it, etc.

The screen and keyboard might be worth it to a buyer.
