I mostly do my organizing each time I copy a batch of pics to the computer, putting them in folders with names that identify what they are and make it easy to search out later, and do the same on naming the photos when they get loaded to a computer so they can be found with a simple search in the operating system rather than in a photo program. I don't like being tied to any particular software if possible.
I also go through each batch after uploading to computer and delete the out of focus and pics not worth keeping so I don't waste as much drive space or have to wade through piles of bad pics later.
I try to keep the pics on the newest machine with the largest drive / most capacity on it but have pics all over multiple machines here too. Just try to move them when I get a new machine with bigger drive.
I use multiple external drives to backup the pics and make sure pics I don't want to lose are on at least 2 hard drives in case of drive failure.
For off site backup I use either a flickr account or just zip and email myself batches of pics to a gmail or yahoo where storage isn't an issue.
Emailing the pics to myself doesn't make them easy to look at but the point with that for me is just quick and cheap off site backup. I still make sure the zip files are named to identify what pics are in the zip file and they can easily be searched in the email provider to locate specific stuff.
