The Saab roofs are very strong, and can support the weight of the car, but that is provided that ALL of the pillars are involved in supporting the weight.
In the case of the Hyundai, it would appear the sheet of ice is pretty thick, and hit the roof edge-on, concentrating the forces.
A non-sunroof 900 would probably sustain about the same damage, a sunroof car maybe wouldn't bend as far, but since you'd be bending more bits (sunroof panel,s tray, etc.), it would be just as devastating.
A 900 without a sunroof is basically a sheet of Swedish Steel with a not-much-thicker stiffening crossbar bar a bit behind the driver's head. Other than that, all the structure is in the pillars and the "halo" beams at the top of the windshield, top of the hatch, and going front to rear. That provides good protection in a typical road accident, but it really isn't designed to handle this situation (or the air conditioner in that ad...).
Saabs are strong relative to other cars of their time, but generally only when talking about most typical road accidents. I'm sure Saab never tested a car by dropping an air conditioner or slab of ice - edge on - onto the roof...
