I 'believe' that two of the important design parameters for septic systems are: soil conditions, and number of bedrooms in the dwelling. The number of bedrooms defines the expected system load for waste water.
If your family typically has larger reunions/get-togethers at the cottage with the 16+ people you stated, then the system needs to be designed as if it were serving an eight bedroom home.
Septic systems also CANNOT handle food waste, something that 50 week/year city dwellers have a hard time remembering. Dean's comment is one appropriate method of dealing with this, the other is strong self discipline in not discharging food waste into the septic system. Again, a summer cottage hosting large gatherings of people accustomed to city sewer systems could benefit from a grease trap bceause so many of the guests may not know or remember to avoid placing food waste down the drain.
