A number of complete cars are in the $150K to $180K range. These all seem to have Ford Racing 429 V8 engines. Someone in AZ has a complete car with a Ford 302 advertised for 'only' $40k.
The million dollar plus original cars were built with 289 V8 engines! Assuming nothing is wrong with the AZ car other than a less desirable engine, Rousch Racing offers fully built 302 racing engines for either $8K or $11K.
If I was crazy enough to take my wife's direction with this purchase (35 years of marriage teaches you a lot) I would opt for the AZ car and then upgrade the engine later. But being able to purchase pump gas rather than 110 octane racing fuel has some significant advantages.
