Economics of old cars

As my 9-5s get older and I consider adding additional Saabs, I'm thinking more about the economics. With a new car one pays for the new parts plus branding, depreciation, interest, warranty, etc. With an older car, one mostly pays to refresh worn out parts. Is there some sweet spot? I look at many 9-5s being virtually given away, many in mostly working order with what would be a lot of miles for some other cars. However, one can only buy them intending to drive them into the ground as one isn't likely to recover the funds needed to refresh these cars.
Is there some argument for buying a used car and refreshing many things immediately? Spend and then drive versus drive and spend often? I guess the risk is an engine/tranny failure or an accident with little way to recover the investment. Can one get classic car insurance with a defined value more equal to the car plus improvements?
