Unless you can prove negligence I doubt you could hold anyone liable for damages as a result of their opinion. If you say, "The CV boot is intact and looks good" then you've rendered an opinion based on your observations and there isn't much more to it. If you say "the drivetrain looks good" but failed to inspect the CV boot and it fails, then there is probably some negligence.
I would look at the way home inspectors conduct their business - they usually document their inspection with photos of everywhere they've been and render opinions on those photos. If they don't show a photo of the roof and it fails, then you really have no cause for action because they didn't suggest it was inspected. If they look at the roof, take a picture, say "looks good to me," and then it fails, you have almost no recourse as the buyer. They've shown you what they've seen, and the only thing their opinion is based on is some education and some experience. There is no empirical testing of the roof happening.
If there is testing happening, then it's a little more scientific... but it's really difficult to prove an informed opinion was rendered negligently. I think it would be a reasonably safe business, given you are up front with the nature of your qualifications and your procedure. A used X inspector is pretty much caveat emptor.
