Couple of things, as John A. pointed out, just because they will probably exceed the limits of coverage, doesn't mean that you're SOL.
If you sue and win in small claims court, then that can be attached to wages, and worst case scenario, property. That's where you go out there with the sheriff and start taking things.
Also, you could make a claim against your own insurance and then let THEM deal with beating it out of the guys ins. co., aka 'subrogation'.
Don't just roll over! you DO have the right to fair compensation.
Also, makes ya wanna think about the price cars out there and evaluate what would happen to YOU if you smacked a new Cadillac with the state minimum car insurance.
