The markings on the dipstick show the desired level range, not a volume. Don't equate one for the other.
Higher engine operating speed, and the resulting faster oil pump speed, mean more oil volume is pumped from the sump up into the engine more quickly. The gravity drain rate of that oil back to the sump doesn't increase, so there is even less oil in the sump into which the pick-up is submerged.
Now add in some acceleration (lateral or linear, doesn't matter) and that change in the 'down' direction of 'gravity' changes 'level' relative to the sump's bottom.
Start sucking air into the oil pump and the froth of oil has less ability to maintain a lubricating coating on sliding surfaces. Too much oil can lead to rotating crank components splashing in the sump oil and causing a similar aeration result.
Over-fill and under-fill are each detrimental, and it's entirely possible to have BOTH conditions if a small capacity oil pan is installed on an engine subject to high speed operation.
Now, with a two stroke having no sump .........
