Hi Simon, Ed Abbott of Abbott Racing told me that the temp needle should be in the 9 o'clock to half past 9 region of the gauge. Anything lower than that and the thermostat is not working properly. The thermostat is a cheap part and straightforward to fit. Get the dealer to do this simple job for you as part of the service it now needs. Your're probably hearing the the radiator fan continuing to run after the engine is switched off.
