Get a factory thermostat part number 8817538 and a fan sensor VW # 823959481D and replace the stock one in the radiator to the left side. make sure both fans run when they sensor closes. If the problem persists, you can drill two additional holes in the bottom plate of the thermostat to match the one already there ot eliminate the problem. It is a good practice to flush the cooling system every 30000 miles and change the thermostat at that time. The Saab thermostat is a three position design that bypasses flow to the heater core in hot conditions and directs full flow to the radiator. Aftermarkets don't incorporate this design and could cause no heat, overheat or work fine. The factory thermostat is designed for the car. Your decision whether to risk it or not. Price a head gasket job if the cooling system continues to be neglected.
