I have an 87 900 which had a similar over heating problem this past summer and I did all sorts of things including wiring a direct 12V switched line to the fans to keep the temp. gauge down. But I overlooked the obvious problem the thermostat was just old and was sticking, you might try replacing it, it's one of the cheapest things you can do from both a parts and labor stand point.
