Johan, Oil pressure should be at least 15 PSI at idle, 30 or more at speed. These are minimums, with a hot engine - pressure will be higher when the oil/weather/engine is cold. Could even max out the gauge. "Too low" pressure is much more of a problem than "too high". Your voltmeter reading sounds a little high. It's probably just that the gauge is a little inaccurate, but I'd have it checked anyway. Voltage should be 13.5-14.5 with minimal electrical loads, should never drop below 12V except momentarily (i.e. when idling with a lot of loads on like headlights+rear defog+high-speed fan, etc.). If the voltage really is 16V, you may have a problem with the alternator that could ruin your battery and possibly more.
