I can't help you with the manual but I can give some clues to remove the dash. I did instal another dash in my car today (wooden). If you mean just the dash and not the gauges it is rather easy to replace (although quite some work). First remove the ashtrey and the mounting of that ashtrey. That way you can reach everything you have to untie over there. You will find two pins at the left of the dash which are being inserted and loosened beneath the dash (above there where you left knee is when driving ).Those have to be taken out as well. Make sure you write down the connections (e.g. : grey = rear window defroster,...) : will save you a lot of work afterwards. Then loosen the dash and undo all connections. It is by the way a good chance to replace those 'hard to reach' bulbs like the one for fasten seatbelts. I might have forgotten a few descriptions of where you can find some screws but it isn't that difficult to find. I did unscrew my left speaker as well.
