If we're talking classic 900, then the thermostat on the radiator is no more than a switch that turns the radiator fan on once a specific temperature (89C or 82C?) is reached. I think the gadget *you're* after sits on the head, front edge, somewhere near or under the distributor. A single wire connects to it. The temperature gauge measures the resistance between this sensor and ground. You might start by checking electrical connections along the way for corrosion. If you're getting other mystery behaviour from the instrument panel (still assuming classic 900 now), check the braided cable between the battery negative pole and the transmission casing, including the body anchor point. Clean all contacts with sandpaper if corroded. Much weird gauge behaviour has been caused by bad grounding.
