I had a similar problem and my shop ended up changing a temperature sensor. But the problem was also accompanied by incorrect cooling fan operation as evidenced by coolant boiling over. Fortunately, we suspect no engine damage. Like you're observing, the thermometer behavior was highly erratic. Just a related anecdote for you.
