Hi, You should be aware that Saab did change the oil/water/coolant channel configurations in the block a couple of times during the 80's. This means that there is a risk you can mess up your motor nicely if you get the wrong head gasket (channels can get blocked by the gasket, coolant can flow into the oil system,etc). Use the VIN or block serial no. to confirm which part number your new gasket should be and thus ensure a correct match. You will also notice that the right aft part of the head is connected to an engine mount. When you unscrew the bolt holding the two, the engine will drop a couple of centimetres, so you'll need another person's help when refitting, to pull the engine to the left while you reinsert the bolt. Make sure that the cranskaft is at TDC and the cam sprocket is also at its home marker (you'll see it when you lift the camshaft cover). My experience is from replacing the head on a 1983 99 single carb, back in 1989. That's all I can think of at the moment - my guess is that all other issues for Saab head maintenance are the same as for other OHC cars. Good luck with the job.
