Well, since you're used to living without the hatch, you won't be giving that up in the Aero. I'm guessing that the 9-5 SE you have is a 185HP LPT - the Aero should feel faster but with a larger turbo will have more turbo lag. The Aero handles curves like it's on rails and with the ReAxs the rear end of the car feels very "connected" to steering input, unlike the older 9-3 chassis. The utility of the fold-down seats in the Aero were a huge factor for me. I can still transport my snowboard bag to the airport whereas the other cars I looked at either didn't have it as an option (Acura TL) or charged a ridiculous price for it (BMW 330i). The 9-3SS line has scored extremely well in side and front impact tests against other vehicles. The 2005 should have most of the electrical gremlins worked out of it (my 2004 has been flawless through 9200 miles). SAAB doesn't have some of the high tech gadgetry offered by other manufacturers these days but then again neither do the other older models you're looking at. Finally I think the 9-3SS sedan is one of the best looking sedans available now.
There you go - my completely biased opinion!
