I currently own a 2001 A4 2.8 and am selling it to return to Saab. After driving an NG into the ground, I made the switch a year ago to Audi and have regretted it. Nothing particularly wrong with the Audi. It's been a good car.
To me the biggest difference is in the responsiveness. The Audi is heavy and feels sluggish compared with the torque of the Saab. Saab is much more spritely. Braking is cleaner, and gas mileage is much better (compared to the 6-cyl). I found the driver displays in the Audi confusing compared with clean ones on the Saab. Controls are overloaded and complex.
That said, the interior of the Audi is very nicely appointed and finished. The car performs very well, especially in inclement weather. Interior feels very big, especially for the size of the car. Finally, the Audi has been more reliable than my NG was, but I'm not having as much fun driving it so I've come back.
I think you're looking at two excellent choices. Simply a matter of preference.
