I would definately change the belt. A broken belt will ruin your day and leave you stranded.
About the rotors, I have heard good things about Bembros, but have no personal experience. If you are paying for labor to get the brakes done, you might as well replace rotors and pads and then go another 60K. I say this as labor is likely more expensive than the parts themselves. Going new pads only may result in the pads outlasting the old rotors, requireing another brake service much sooner when your rotors eventually warp.
The next two items may be considered optional if you don't plan to keep the car much longer. If you plan to drive another 60K, I would do them.
I believe this car was supplied with Saab "Lifetime" coolant, which should be good for many years, but it wouldn't hurt to flush it and replace with the same.
Brake fluid technically should be flushed every 2 years, as it absorbs water and that will diminish brake performace and potentially cause brake components corrode on the inside. I would guess most cars on the road have never had their fluid flushed purely as preventive maintenance, but it is good idea and may save you from replacing a caliper a few years from now.
