Check so that the expansion cap is holding pressure. It might be that when the air pressure outside drops climbing to altitude the coolant level rise and start flowing out of the expansion cap.
It happened to me when I took my Volvo up to Lake Powell some years ago.
Stopped at the local gas station up there to fill up gas and suddenly the coolant started to overflow from the expansion cap. I thought something was wrong but when it had pushed excess coolant out for that altitude it stayed the same and I drove the car back to LA without a problem.
Well at home I filled it back up to level and it stayed that way after that.
I thought about it and attributed it to the lower air pressure and also fairly hot weather at the time.
Why the coolant level light came on in your car with the tank at level I can only guess that the level sensor might be going bad.
