For several years they put the 100+mph fully loaded figures on the door jamb, 2004 IIRC, just to err on the safe side as low tire pressure is one of the most common safety problems of them all. I guess they figured that it would always be safe at any speed or any load with the higher pressures.
You are correct, your owners manual has the correct pressures for various loads and speeds.
