As others have said, start with the pressure recommendation on the door post label for your car. Adjust as necessary.
As for storage, whatever works best in your situation. I find tires stacked vertically are the easiest to deal with. They can't go rolling suddenly, the top is flat, or can be really easily with a stiff board, and one tire or eight are mostly the same footprint in the garage. Out of sunlight is best, and covered. Some car accessory companies now make covers you can put over your "out-of-season" tires.
I've also stored them vertically. I think the danger of "deforming" a normally inflated tire which is supporting only its own weight and that of the the wheel (50 lbs give or take...) is extremely low, as when it's got the car attached, it's supporting upwards of 750 lbs. I've had Saabs sit in my driveway for 6 months, and the tires don't deform then, so...
