02 Arc--120k tune up sequence and other repairs

My 02 Arc is in need of the usual 120k service (timing belt, pulleys, spark plugs, filters, etc.)
In addition, it also has a CEL and a dropping temperature gauge, as well as a leaky oil cooler (the oil cooler was replaced under warranty, so my mechanic figures that it just needs to be resealed and not replaced.)
I can't do everything at once, at least, not right now.
I'm given the impression that the replacement of the temperature sensor/thermostat as well as the oil cooler requires the removal of the manifolds, which isn't done otherwise.
So I figure I can do this in two separate transactions:
Visit 1: Remove manifolds for temp sensor, thermostat, oil cooler repair, and do spark plugs while that's all torn up
Visit 2: Timing belt, timing belt tensioner, serpentine pulley and pulley tensioner, water pump.
And spread between the two visits the little stuff that's not related, like the fuel filter.
Am I correct in this, or do you have to remove the manifolds to do the timing belt repair, in which case I should just do everything at the same time?
