For starters, Dexron III has been superseded, and you can (and probably should) use the newer stuff. Since you already have some, though, go ahead and use it.

Why 3 drains? You get out about 1/3 of the fluid with a single drain and refill. The second time you do it, 1/3 of the old fluid is fresh, plus you add 1/3, making something like 2/3 fresh. The third time is just more insurance.

Were it mine, I'd use synthetic AMSOIL ATF. If the existing fluid is nasty, I'd replace it first with non-synthetic, 3 drain/fill. Then I'd do it again with the AMSOIL 3 times, and not worry about it for the next 50K.
