The sticker under the hood, usually called the "Emissions sticker" reflects the model year the vehicle was built to. It is mandatory for the USA, but I'm pretty sure Saab does it for all markets.
The sticker on the door (on US cars its the driver door, not sure if that applies in RHD markets, or if it's always on the left front door) reflects the month and year of construction. As Jan said, production usually runs August to July, but often cars are built early (look for this especially in 1999 9-5s).
The 10th digit of the VIN number also always reflects the model year of the vehicle.

2001=1

2009=9
2010=A
2011=B
...
