the temp gauge in the 9-5 is really not a temp gauge like in the old days. It is driven by the computer and the computer decides what to tell you.
When the gauge drops to Zero this is usually because the water temp is not where it should be once the oil and engine temps come up. The computer then drops the gauge to zero to get your attention.
So hook up an OBD II so you know what the temp really is and what is going on. one of the readings on OBDII is water temp from the sensor.
Without knowing what is going on in the computer you don't know enough to start changing parts.
