Grayish-white, can see through, dissipates quickly:
COOLANT getting heated up to steam as it passes through the combustion chamber.
Bright white, thick, almost opaque, dissipates very slowly:
OIL being burned AFTER the combustion chamber on hot metal surfaces like the turbo compressor, exhaust pipes, etc. Probably due to turbocharger turbine side seals usually, sometimes head issues. (you can sometimes get this to happen if you engine brake on a long downhill run. The oil pressure is so much higher than the pressure in the exhaust system, the oil just gets past the seals. This usually clears up when you resume normal driving.)
Bluish, usually wispy, hangs for a while, or can dissipate:
OIL being burned inside the combustion chamber, could be from leaky valves, turbo compressor seals...
Black/Gray seen under acceleration:
FUEL, as in too much of it. At some times, this is normal. If you're not getting a code, don't worry too much about it.
