The head gasket is quite a job. I'd get new bolts and retorque first, and see if you still lose coolant.
Now that you've dropped the sump, definitely put in full synthetic. Anything else is false economy.
It is very surprising to me that the engine near-sludged in that short of time. There is a big different in oils. What was your oil change interval?
