Granted, a blown head gasket at 35k miles is a serious black eye to your SAAB experience, but you appear to be the rare exception. SAAB and GM took WAY too long to figure out the PCV issue with this engine, but they appear to have finally got it.
The other problems you recently posted don't seem too bad. You may only have 35k miles, but the car IS 5 years old.
Should coolant bypass valves last longer, definitely, but they're more of an annoyance than a serious car problem.
Should the car battery last over 5 year, sure, but I don't know how much better other modern cars fare.
Headlight relay, can there be a simpler thing to fix on these cars?
I'm not sure what you mean by sunroof cassette? I assume the entire assembly. That shouldn't happen, but has anyone else experienced this?
You've had some simple routine maintenance, and a couple of very rare problems. I don't think the two rare's classify your car as a lemon.
There are plenty of people on this board who wouldn't hesitate to own your car, but it seems like you've had enough.
I think you should get rid of it, for your own piece of mind.
