Generally it gets dark as it absorbs moisture. Since you likely don't let anyone else top up your fluids you can discard the idea of someone putting the wrong fluid in. Did you do any bleeding when you did the pads and rotors? When you were pumping the brakes up after the job, did you let the pedal go to the floor?
