It would certainly be easiest to have someone drive the car every three or four weeks, and I recommend this approach if the car will be under cover or garaged and you really trust the person to not abuse your vehicle.
You cannot just disconnect the battery and walk away from the car for 8 months and expect it to be fine when you return. You risk all sorts of problems, depending on the environemental conditions. If the car were outside the whole time it would only be worse.
To properly store a car for 6 months or longer you should change all the fluids, clean the interior and clean and wax the exterior, remove and store the battery connected to a trickle charger, install jackstands to prevent tire damage, install a dehumidifier inside the car, and put a car cover over it. You still risk having corrosion problems in the cylinders and other unpleasant possibilities like rodent infestation.
I think that you should consider selling the car and getting a replacemnet when you reurn. It would be easier on the car and on you.
