The ECU compares the reading from the temp sensor with the other temp sensors in the engine. There is and inlet air temp sensor and either oil temp or engine temp. If the coolant temp does not compare properly the ECU drops the "gauge" to zero to warn you.
If your OBD II is 156 at fully warm I would suspect the temp sensor. I should be 185 to 210 or more.
Most people change the temp sensor and the thermostat at the same time. Lots easier to change the temp sensor and less coolant loss. That would be the first one to try.
