the subframe will stay in place when you have the front bolts still attached - and the bolts from the steering rack are not completely off either...and the suspension and control arms also essentially still connect the subframe to the car...so it's not like the subframe will come crashing down on you.
Total weight is not that bad, you can lift it by hand when under the car (I'm not very strong) assuming it's still connected in the front of course :)
No need to replace the bolts, chances are they're still in good shape, and the torque figure is not enough I would think to damage them (74ft lbs)
As for your experience with the rear suspension (bushings I presume), that means you'll be in familiar territory, absolutely no surprise there except the cramped quarters
speaking of them rear susp, did you do the rosebuds ?ie the 2 smaller bushings at the end of the control arm ? If so, were they in bad shape and difficult to remove/press
