Didn't sink before the brake work? Does now? You got air in somewhere. But did you check the performance by pushing down and holding the brake pedal before you started? A sinking brake pedal is a sign of a worn master cylinder seals. Most often it is first noticeable on light pressure as the seals are shaped so that more pressure makes them tighter. Air in the system makes it feel "spongy", but once you've reached equilibrium, it holds there.
First try the simple stuff - just open the bleed screws with a bit of tubing set over them and let it run (aka gravity bleed) until it runs without bubbles showing. Any air in the calipers rises to the top. IF you have air trapped in the lines somewhere or in the master cylinder, then a full bleed will be necessary, but as you said, the reservoir is full of clean new fluid.
It is virtually impossible that the brake fluid is causing the problem. The only way the fluid goes bad is by being full of water, which causes pedal problems when the system is hot. And brake fluid is kind of a critical product which any respectable company (like ATE) controls the production of very well.
