1 to hold the key
1 to depress the latch
1 to pry open the cove
Since I only have two, I substitute the first need by clamping the blade of the key to my workbench.
With it secure, I now have the needed two hands to depress and pry.
Another solution is to secure your depression tool (I use an Allen wrench) in a bench vise.
