It could be a leak anywhere along the system -- not sure why you are jumping straight to the evaporator.
There are lots of joints with O-rings and other areas where a leak is possible (and not easily visible).
I looked into the evaporator a while ago, and it sounds like a pain -- it is housed in the same location as the cabin filter, and the plumbing goes through the firewall to join up to the rest of the system.
Finding the part is a simple as going to eeuro or rmeuropean and searching. Procedures on the internet were hard to find, but someone with a WIS may be able to help you out.
Rule out other issues before just throwing an evaporator at it
