Thermostat is certainly a fair starting point, regarding the heat issue. I'm not sure that I would bother with the temperature sensor unless you have reason to suspect it, given its age. Certainly give the electrical connection a good cleaning while you are there. Also make sure the Bypass Valve or McKay hoses are properly connected so hot coolant gets where it needs to be.
I had quite a long saga of lousy heat in my car (2003 9-5 Arc - V6) last winter that we ultimately solved with a new heater core (terrific deal on a Valeo from rmEuro). Once I actually saw the new core and how small the tubing etc, its easy to see how over time they can start to block up and limit the effectiveness. In my car, the heater core was not much more difficult to do than the cabin filter. I have very robust heat now.
