I like to keep things nice too, but water pump bearings have to take quite a side load and stay straight, smooth, and leak-free. Pressing one out and back in again into a cast aluminum face plate would be challenging, and I wouldn't risk the outcome. With the pulley welded to the shaft, the equation gets to be one of doing it only for the challenge instead of reliable operation.
I have had very good luck with three Airtex water pump front halves and re-using the housing. The digitally etched numbers on the body and the country of origin (Spain) made these appear to have come from the same source as the SAAB branded one that I installed in a different car. Welding between pulley and shaft was very clean. The price was extremely reasonable, and I doubt I could source just a bearing much cheaper.
So I realize I didn't answer your question that way you hoped, but I would spend my TLC time on something you can't buy or which won't have the same risk of needing to be re-done.
