When the warm air starts blowing, does the outside air temperature on the SID read "---"?
If the wiring or outside temp sensor were damaged (they sit in the lower grill), they could crap out intermittently. The ACC assumes a very cold outdoor temperature (something crazy like -40) if there is no signal from the sensor and defaults to heat mode.
Stopping the car and restarting may just be enough jostling to make a weak connection work again.
