Haven't tried it, but an interesting idea.
I'd be careful with load rating, though. A quick check on Tire Rack showed max weights and that odd load rating number (like "91H" after the size) to vary considerably between brands, with the 215/55's always higher than the 205/55.
Seems like you'd be OK if you kept the load rating and speed rating in line with the way you drive and load the car. After all, the recommended snow tire size (which I do use) is 195/65-15. there's another alternate snow tire size for 16" wich could be 205/55, but my wife has the car today, so I can't check.
