I simply needed a piece of wire to connect everything, and this mouse just came alone, so I thought: "Hey, this is a nice flexible cable!". Chris M in the original posting used a piece of Cat-5 cable (a twisted pair network cable). You can use whatever you have, or go buy a couple of feet of a nice cable if you want to.
The whole point of this hookup is that your Saab is already pre-wired for a telephone installation. There's a microphone on the ceiling behind the rear view mirror, and the stereo has the "telephone" more (simply put, it's the fourth source beside the radio, CD and the tape). When you turn this telephone mode on, it would stop whatever it was previously playing and play the sound from your telephone. It works like a speakerphone mode of a regular desk phone, only with really nice speakers and a decent microphone. You can talk on the phone without having to hold it next to your ear, and without wearing a headset. And your passengers can participate too.
The problem is how do you switch the stereo to the telephone mode. Technically it is done by connecting its "mute me" signal with the ground. Some cellphones support this feature, and in this case you can connect the mute wire from the radio directly to your phone's proprietary connector. Some phones don't, and this is what my mute button was for -- with my phones I have to push it manually to switch the stereo to the telephone mode.
As for cutting the wires off your earpiece, you don't have to ruin your favourite earpiece at all ;). Just go buy the cheapest Nokia-compatible handsfree set you can find (these should only cost a few bucks) and cut the wires at the earpiece end, so you'll get a plug with a long cable attached to it. AFAIK, Nokia phones have a 2.5 mm jack, but it has four connectors instear of the standard three, thus you cannot use the one from Radio Shack. You can go even further and buy a Nokia compatible cradle -- these usually have all the connectors at the bottom, so you can hook it up not only to the stereo, but to the power as well, to charge your phone in the car (12V is supplied on the Saab harness).
And finally, I don't remember the exact colour of wires, but the pins are documented in the manual that comes with the harness. They are also described on my website.
