Search this board under "drs<underscore>install" but use the actual underscore character and no quotes, and you'll see numerous posts on this subject. I used aftermarket rotors (Zimmermans) and Saab pads from a board sponsor. Saved a bundle.
But, for the short version, wheel bolts are around 82 ft-lbs.
Caliper bolts are 18 mm hex head and are also around 80 ft-lbs. They have red loctite and I used a cheater bar to get them off. They are tough to get off.
Don't know the slider bolts torque, but they are hex with an unusual size (7mm I think... most hex key kits skip that size for some reason so better check first or you'll be stuck). The rotor index screw (the screw that holds the rotor to the hub when the road wheel is off) will either be a torx or a hex...hex is 5mm. Be very careful, use PB Blaster or something on the bolts before you try to get them off or you might strip the head and then you'll really be stuck. When you re-install the index screw I used never-seize, and don't overdo it when you put in back in. Just snug is all thats needed. Once the road wheel is back on the lugs hold the rotor.
Gravity bleeding? I used a power bleeder (Motive Products) and it was a snap. DOT4 is correct. Pentosin makes a good product, others use ATE Super Blue. Expect to use most of a liter. I think Pentosin is what came from the factory. Good luck and have fun with it.
