Thanks to all for the advice and ideas. Finally found the time to install a new head and amp.
The head- the Saab radio booklet was all i really needed. It provided all of the wiring/color data I needed. I opted to cut and splice- versus ordering a pre-made plug (too much $$$ for something I can do). The Pioneer has a universal fit- dropped/locked in with no need of additional brackets. Only issue- it seems a little set back for my liking- read... not exactly flush with dash. Suppose I could fab something to fix this.
Amp- Decided on the trunk location- too big for under rear seat (a CV). Opted not to screw it down- instead I used a litle velcro; sticks well to the trunks carpet (so do pine needles) and makes for easy uninstall. Put the amp in the same location as changer (behind the tire). Ran all of my cables thru the hole in the back seat (pre-existing); from here I ran under the carpet on either side of the car. PWR up the left side- everthing else up the right. The center option was just too tight- I couldn't get the EQ/AMP Din cable out either. I opted to drill a hole in the left/front well for the 8 gauge PWR cable. I could not foresee being able to run this cable thru a pre-existing hole; the rubber grommets made for a tight fit everywhere. I zapped the hole with some silcone to keep water out. Everthing else runs up the right side (under rug), behind kick board and straight to the head. Very easy! I grounded on the frame behind the rug- about 5" from the amp. Yes- another hole!
Sound- GREAT! Even with the stock rear speakers (not for long). Borrowed a friends 10" sub to see what it sounded like (ran everything for a sub too)- nice! Will probably opt for 1 or 2 8" in the future. Rear speakers are next- looking a pair of MB Quart components. I'm re-doing the fabric over the rear speaker mounts now- will flush mount the tweets to this.

PS- I was able to remove everything from the old system (amp, head, CD/EQ and all of the dins; minus cable to amp- any easy ideas on getting this one out?) Plan on keeping for now- just in case someone else totals the girl- easy enough to throw everthing back in for the insurance guys.
