The only reason to use a copper gasket is if you run very high boost. They also require machining grooves around the bores on the block top, to provide an edge to bite into the copper a bit. A significant complication, and oportunity for a mistake.
Trying to get a soft metal gasket to seal oil, coolant, and combustion products is not easy, compared with a standard composite gasket that compresses substantially in the installation process, being more tolerant of any surface flaws. Modern gaskets use graphite etc, and deal with alum/steel thermal squirm much better than the old days.
An oem head gasket, properly installed, should last 100K miles w/o any weeping leaks, and much longer before compression leaks. These have an integral metal ring that surrounds ea combustion chamber. Usually little chance of leak after installation ....not true with copper.
