In my humble opinion, ALWAYS go with the Saab OEM thermostat. The Saab thermostat is actually a three position unit - most aftermarket ones are only two position. I've also heard of people having problems bleeding the air out of the system with some aftermarket units.
Once I used an aftermarket thermostat and had major problems (it stuck closed). OK, it may have been an isolated incident, but it was enough for me. Changing a thermostat isn't hard, but it's not something I enjoy all that much - draining the coolant even a little is a pain. So for the extra $6 or so, I buy Saab on thermostats.
