As others have said, you don't have to drain the system all the way down, just a quart or two is fine, as the thermostat is at the top of the cooling system. With a cold engine, I suck the coolant out of the tank. A turkey baster works fine. My favorite is a aftermarket windshield washer pump I picked up at an autoparts store for $12 - I wire it to the battery, and pump coolant into a clean container. I never have to mess with the drain plug (which usually sticks).
Replacing the thermostat is pretty easy in the 900. Definately check out the Townsend site for more information. You will have to bleed the system afterwards. In fact, your thermostat may be fine, but the system may just need to be bled, as air in the system is one reason for poor heat.
Spend the money and buy the Saab thermostat. The Saab thermostat is a special three-stage, whereas most aftermarket units are just two stage (open/closed). It's not hard to replace the thermostat, but it's messy and something you don't want to do very often. So the few bucks saved on the parts store thermostat won't seem very good if you've got to do the job again, probably in a cold driveway. I've had problems with non-Saab thermostats working properly in Saabs - the cooling system is flaky enough without adding more problems.
As the others have said, get the 82 degree C unit - that's a few degrees cooler than stock (89?). Unless you live near the artic circle, you won't notice the difference in winter, but the car will run cooler in summer.
