Head Machining?

So, I'm in the process of replacing a head gasket on my '87 900 Turbo Conv. and take it to the machine shop to have it milled ($22.00). He calls me the next day and says that it's too warped to mill as it is; but he can heat straighten and then mill it (additional $95.00!!). I asked a few guys at a local service shop and learned that they give that story to everyone just to pump up the bill. I then pick up my un-milled head anhd thank the machine shop very much>NOT!
I take my head to another shop and he mills it, but tells me when I pick it up "it's pretty close in the center there".
So the question is; how much can the head be milled before valve/piston interferance, and how do I measure to make sure there's adequate clearance.
And while we're on the subject; which is worse, the feeling that you're about to be screwed (for 95 bucks), or actually having been screwed (IF the head has been overmilled).
What a razors edge it is.
